White Chicken Enchiladas

WHITE CHICKEN ENCHILADAS 

mmmmmmmmmmmmmmmmm!

Ingredients___________________________________________________

  • 6 Flour Tortillas (8″)
  • 12.5 oz. can chicken breast chunks, 2 cups rotisserie or other cooked chicken
  • 1/2 cup Extra Sharp Cheddar
  • 1/2 cup Monterey Jack (or Pepper Jack)
  • Extra cheese to top the enchiladas
  • 2 Tbsp Butter
  • 2 Tbsp Flour
  • 1 cup Chicken Broth
  • Chopped Chipotle Pepper to taste (I use chopped peppers from a jar)
  • 1/2 block Cream Cheese

Directions_________________________________________

  • Preheat Oven to 350 degrees
  • Grease an 8″x8″ pan
  • Mix chicken, cream cheese, cheddar, jack cheese, and chipotle pepper in a bowl.
  • Place mixture in tortillas, roll up, and place seam side down in the pan
  • Melt butter over medium-high heat
  • Stir in flour and cook for 2 minutes
  • Add broth and whisk until smooth (I add milk if it gets too thick)
  • Pour sauce over tortillas, cover with lots of cheese, and maybe add a sprinkle of Cayenne Pepper!
  • Bake for 20-25 minutes.
