WHITE CHICKEN ENCHILADAS

Ingredients___________________________________________________
- 6 Flour Tortillas (8″)
- 12.5 oz. can chicken breast chunks, 2 cups rotisserie or other cooked chicken
- 1/2 cup Extra Sharp Cheddar
- 1/2 cup Monterey Jack (or Pepper Jack)
- Extra cheese to top the enchiladas
- 2 Tbsp Butter
- 2 Tbsp Flour
- 1 cup Chicken Broth
- Chopped Chipotle Pepper to taste (I use chopped peppers from a jar)
- 1/2 block Cream Cheese
Directions_________________________________________
- Preheat Oven to 350 degrees
- Grease an 8″x8″ pan
- Mix chicken, cream cheese, cheddar, jack cheese, and chipotle pepper in a bowl.
- Place mixture in tortillas, roll up, and place seam side down in the pan
- Melt butter over medium-high heat
- Stir in flour and cook for 2 minutes
- Add broth and whisk until smooth (I add milk if it gets too thick)
- Pour sauce over tortillas, cover with lots of cheese, and maybe add a sprinkle of Cayenne Pepper!
- Bake for 20-25 minutes.
