WHITE CHICKEN ENCHILADAS

Ingredients________________________________________________________________________
6 Flour Tortillas (8″)
12.5 oz. can chicken breast chunks, 2 cups rotisserie or other cooked chicken
1/2 cup Extra Sharp Cheddar
1/2 cup Monterey Jack (or Pepper Jack)
Extra cheese to top the enchiladas
2 Tbsp Butter
2 Tbsp Flour
1 cup Chicken Broth
Chopped Chipotle Pepper to taste (I use chopped peppers from a jar)
1/2 block Cream Cheese
Directions____________________________________________________________
Preheat Oven to 350 degrees
Grease an 8″x8″ pan
Mix chicken, cream cheese, cheddar, jack cheese, and chipotle pepper in a bowl.
Place mixture in tortillas, roll up, and place seam side down in the pan
Melt butter over medium-high heat
Stir in flour and cook for 2 minutes
Add broth and whisk until smooth (I add milk if it gets too thick)
Pour sauce over tortillas, and cover with lots of cheese, and maybe a sprinkle of Cayenne Pepper
Bake for 20-25 minutes.
