CHICKEN CREAM CHEESE TAQUITOS
Ingredients
2 cups cooked chicken (canned chicken works fine)
1/2 block of cream cheese
1 cup of shredded cheddar cheese (I prefer Extra Sharp Cheddar)
1/4 cup of salsa (however spicy you like it)
1 tsp of garlic powder, 1 tsp of cumin, Salt and Pepper to taste
10 small flour or corn tortillas
Olive oil for brushing
Directions
Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
In a big mixing bowl, combine all ingredients. Mix until fully incorporated and creamy.
Place 3 Tbsp of filling along one edge of each tortilla and roll the tortilla tightly around the filling.
Place seam-side down on a baking sheet.
Baking
Lightly brush taquitos with olive oil and bake in a preheated oven for 15-18 minutes or until golden and crispy. (Works well in an air fryer, also)
Serving
Consider adding shredded lettuce, guacamole, sour cream, extra salsa, extra cheese, and a dash of cayenne.
10 minutes to prep. 15 minutes to bake.
NOTE: Make a bunch, put them in the freezer, air fry them a couple or more at a time for quick snack or meal. Don’t forget the delicious toppings!
